About JR Food Consultants

Jane Ruddick, Ph.D is a food professional with a diverse and in-depth knowledge of many aspects of food, food preparation, production and technology.

After completing her degrees in food science, she entered the food service industry as a Food Specialist for both CP Hotels and CP Air, where her duties included the development and implementation of quality control and sanitation programs for use by CP management and staff worldwide. Dr. Ruddick later went on to serve as the Manager of Catering for Canadian Airlines International for ten years before creating the consulting company of J.R. Food Consultants.


Dr Ruddick is a member of many professional organisations including the Institute of Food Technologists, the Canadian Institute of Food Science and Technology, the Canadian Food Professionals Association, the Canadian Produce Marketing Association, the Canadian Culinary Federation, Les Dames d’Escoffier and the American Academy of Chefs. She is also currently the Vancouver bailli of the international food and wine society, La Chaine des Rotisseurs.

Success Stories

Throughout her career she has received many awards from her peers in the food industry and also for her work with young chefs in international competition. She has been very active with the CCFCC National Culinary Team, Bocuse D’Or Canada and, in 2008, she managed the successful Culinary Team BC that won gold at the World Culinary Olympics in Germany.

She is the author of numerous scientific papers and training manuals, and has given presentations to many groups and organizations on all aspects of food and food service.
